Aunt Jemima Frozen Breakfast #Giveaway

If I could only eat one meal a day, it would be breakfast. I love, love breakfast. I love breakfast so much that when I am feeling too lazy to cook dinner, I’ll whip up a poached egg and turkey bacon sandwich or (my very favorite) banana pancakes. I sampled their product last fall at the Blogalicious conference and was impressed that their pancakes were made with real food. I’m talking eggs, milk and flour. A Healthier Family One Meal at a Time: eCookbook Giveway

I love that there is a movement afoot to get families to cook and eat meals together; with obesity and Type 2 diabetes on the rise in this country and around the world,  we’ve got to do something to take control of the food we put in our own and our children’s mouths.  In previous posts, I’ve written about a few of my favorite cooking blogs including Dinner a Love Story and Mom’s Kitchen Handbook and more recently Jamie Oliver’s Food Revolution.  Just when I thought I didn’t need any more recipes or ideas for creating delicious nutritious homemade meals, along comes Chef Jeff Pirtle. Chef Jeff reached out to me to see if I would be interested in sharing his new cookbook with my readers. While I don’t normally do giveaways on Boss Mom, I’m passionate about food, nutrition and cooking and was intrigued enough to check Chef Jeff and his cookbook out.

A native of Seattle, Jeff Pirtle trained as a chef with advanced training in dietary management.  After years of working for top eateries and an extended stint as a private chef, he decided to launch his venture to get families to eat healthily.

The DinneRevolution cookbook is well-organized and features over 200+ recipes – most of which take less than 30 minutes to prepare. The recipes are nutritious, easy to prepare and budget friendly.  Here’s a sample of a recipe we tried out:

Baked Fish Florentine
This is good with any thin white fish that you can roll-up. You can also put the topping
on top of the fish and bake if you choose.
Serves 4
Cook time: 30 minutes
1 pound White Fish Fillet
8 cups leaves Spinach
1/4 cup Ricotta Cheese reduced fat
1/4 cup shredded Parmesan Cheese
1/2 tablespoon minced Garlic
1 cupV8 low sodium
Boil the spinach for a minute or two, squeeze dry, and chop. Add the ricotta, garlic, and
parmesan. Preheat oven to 375 degrees. Place filling on fish, and roll from wide side to
thin side, and place seam side down in a baking dish. Pour v-8 over the fish and bake for
20 minutes or until cooked through. Spoon sauce over fish and serve.
per serving: 177 calories; 33 gram protein; 1 grams total fat; 2 gram fiber; 1 gram
saturated fat; 2.5 grams carbohydrates; 58 mgs cholesterol; 176 mgs sodium
